In winter, 95% of the soil is covered. Ploughing is only carried out when sowing these so-called cover crops. Field beans are preferred, and the seeds are harvested directly on the estate from a sown field: it's a self-sustaining virtuous circle.

The capsule is a non-recyclable aluminum-plastic complex: a real waste product on the bottle. Indeed, it's the cork that ensures the preservation of the wine!
